Welsh Cakes

Ingredients:

225g self- raising flour

Half a teaspoon of baking flour

125g butter or margarine

60g caster sugar

1 or 2 eggs

2-3 tablespoons of sultanas.

Method:

Put the flour, baking powder, and caster sugar into a bowl. Add the butter or margarine, rubbing the mixture through your fingers, until you have a mixture resembling fine breadcrumbs. Add the sultanas.

Add a beaten egg to make the dough which should not be too dry. Add additional egg if required.

Roll out on a floured surface to a thickness of about half a centimetre. Cut out the scones using a 5cm cutter.

Grease a griddle or frying pan. Cook the scones in the pan for 4-5 minutes each side. They should be springy to the touch. Eat with butter and jam.
