180g plain flour

180g medium oatmeal

170g brown sugar

1-2 teaspoons of ground ginger

1 teaspoon of mixed spice

115g margarine or butter

55g black treacle

55g golden treacle

1 level teaspoon of bicarbonate of soda

Method:

Prepare a cake tin. Square ones work well. Line the tin with greased grease proof paper.

Melt together the butter, treacle, and sugar.

While this is warm sieve the flour and spices together in a bowl. Add the oatmeal.

Pour the warm treacle mix into the bowl, and stir well to combine.

Bake in the centre of the oven at 150°C for approximately 1 hour 15 minutes. Test the cake before removing. The cake is ready when an inserted skewer comes out clean.
