Hinny is a term of endearment similar to calling someone ‘ honey ‘. The scones ‘ sing ‘ as they are being fried.
Ingredients:
350g plain flour
1tsp baking powder
Pinch of baking soda
Pinch of salt
75g butter
75g lard or margarine
150g of dried fruit, currents, sultanas, raisins.
Zest of 1 lemon.
3 tbsp of milk
Method:
Put all dry ingredients except the fruit into a bowl. Add the fats, and run the mixture through your finger tips until you have a mixture that resembles breadcrumbs.
Add the fruit, and stir to combine.
Add the milk to form a dough. Gently place the dough on a floured surface. Roll to a 1 cm thickness. Cut into rounds using a 6cm cutter.
Grease a griddle or frying pan with lard or butter. Place the pan on the heat, and fry the scones for about 5 minutes on each side.
These can be eaten with butter and topped with sugar.
