Fillet of Pork x 2

Pork in Honey, Lemon, and Mustard Sauce.

Ingredients:

Fillet of pork

Seasoned flour

2 large onions

1-2 tablespoons of honey

1-2 teaspoons of Dijon mustard

A squeeze of lemon juice

Method:

Cut the fillet into bite size cubes. Toss in seasoned flour. Fry in a frying pan with the oil for 5 minutes, until the pork is starting to cook, and turning slightly brown.

Take the pork out of the pan. Add the onions to the pan. Fry until soft then add the stock, together with the honey, lemon juice, and mustard. Stir well.

Put the pork back into the pan and continue to cook the meat in the sauce for another four minutes.

Serve with rice, or potatoes.

Pork with Pasta

You will need a deep casserole dish for this recipe, as it bakes in the oven.

Ingredients:

Fillet of pork

Seasoning

2 large onions

1 can of cream of chicken or mushroom soup

Tomato paste

Optional: Vegetable of choice.

Method:

Adjust amounts according to the number of people you are feeding. Begin by chopping the fillet into bite size pieces, and rolling the meat in seasoned flour.

Fry the meat in a frying pan for a few minutes until it has started to turn brown. Put the meat in the casserole dish. Fry the onions until they are soft then add these to the casserole dish. Stir together with the meat.

Add the soup together with the tomato paste. Stir to combine.

Cook the pasta in boiling water until soft. Add to the casserole dish, with a few peas, or other green vegetable, to add colour, if you wish.

Top with a layer of grated cheese.

Cover the casserole dish with a lid, or tinfoil, and bake in the centre of the oven at 170°C for 55 minutes.
