Welsh cakes are another version of scone that are made on a griddle. They are very good toasted.

Singing Hinnies

From the North East of England again. Singing Hinnies are another type of griddle scone made with butter, lard, and dried fruit.

Drop Scones ( Scotch Pancakes )

Scones originated from Scotland, and this is a variation known as a Drop Scone in other areas of the UK. The batter is thicker than a pancake batter.

This cake made with oatmeal is associated with Yorkshire and Lancashire. Traditionally eaten around Bonfire Night.

My neighbour gave me this recipe. I found it a bit too dark for my tastes, so I have adapted it. The cake is very light in texture, and keeps well.

In the Geordie language of the North East this could be described as lush. Meaning lovely or nice.
