Drop Scones ( Scotch Pancakes )

Ingredients:

200g self- raising flour

2 level teaspoons of baking powder

200ml milk

25g caster sugar

pinch of salt

1 egg

Butter or oil for greasing

Method:

Put the flour, baking powder, and salt into a bowl. Stir in the sugar. Whisk the milk and egg together, and add to the bowl. Combine to make a batter.

Heat a griddle pan, or large frying pan with a tablespoon of oil, or a light coating of butter.

Using a dessert spoon drop spoonfuls of batter into the pan to form round scones. Fry for 2 – 3 minutes on reach side.

Serve with butter and jam, assorted berries, honey, yoghurt, or maple syrup.
