Ginger and Guinness Cake

Ingredients:

250g self raising flour

175g butter or margarine

2 eggs

150g golden brown sugar

1 dessertspoon of ground Ginger.

Half a teaspoon of Bicarbonate of Soda

1 teaspoon of ground Cinnamon

Half a teaspoon of nutmeg. If you don’t have nutmeg add more cinnamon instead.

50 ml of Guinness

50ml of water

Method:

Melt the butter. Place in a bowl with the sugar, and mix until well combined. Add the black and golden treacle.

Break the eggs into the mixture, and stir well.

Add the spices, together with the flour. Stir until smooth.

Combine the Guinness and water in a saucepan, or place in the microwave, and heat until boiling point. Cool slightly, and add the liquid to the mixture.

Note: The mixture is very liquid, but will bake to make a soft textured cake.

Line a loaf tin with greaseproof paper. Pour the mixture into the tin.

Bake in the oven at 180°C for 35 – 45 minutes. Check the cake after 25 minutes, and cover with foil, if the top is browning too quickly.
