Ingredients:
1 tin of salmon
30g of butter
30g plain flour
140ml milk
4 tablespoons of thick cream.
Lemon juice
Seasoning
Half a teaspoon of paprika.
Method:
Remove any skin or bones from the salmon and place in a bowl. Add lemon juice, seasoning, and paprika, stirring to combine.
Make a simple sauce. Melt the butter in a saucepan, and then gradually add the flour stirring all the time until a paste is formed. Add the milk gradually while continuing to stir, until a smooth sauce is formed. Take the pan off the heat. Cool slightly.
Whip the cream, add to the sauce, together with the salmon and mayonnaise.
Put the Salmon Cream in glasses, or ramekins. Serve with salad, slices of brown bread, and twists of lemon.
