Easy Sponge Flans

Ingredients:

150g plain flour

4 eggs

2 teaspoons of baking powder

125 g sugar

A few drops of vanilla essence

Method:

Combine all the ingredients together in a bowl. Beat until the mixture is smooth.

Put the mixture in a flan tin, preferably one with a removable base. Bake in the oven at 160°C for 20 minutes.

Allow the flan to cool before gently removing. Warm some jam and spread this over the base of the flan for extra sweetness. For a very simple filling use a quick setting jelly with the fruit.

Note. The recipe is sufficient for one large flan, or 4 small ones.
