Potato Croquettes

Ingredients:

500 g mashed potatoes

Plain flour

1 egg

Seasoning

Breadcrumbs

Oil for frying.

Method:

The mashed potatoes should be firm. Add a little flour if necessary.

Add 50 g of grated cheese, herbs of choice, use cooked chopped ham, chicken, bacon, creamed leeks, onion, or fish of choice to vary this basic recipe.

Season additional flour, shape the potato into little rolls, and coat the rolls in the flour.

Beat the egg, and brush over the croquettes. Now roll the croquettes in the breadcrumbs.

Fry in a little oil until crisp, or deep fat fryer. Drain on kitchen paper.

You can freeze the croquettes either before or after cooking. When defrosting them let any ice defrost before putting the in the hot oil.
