My father used to bake treats like these in the middle of the night when he couldn’t sleep.
Oven temperature. 220°C
Ingredients:
230 g self- raising flour
115 g margarine
115 g sugar
115 g dried fruit
1 egg
2 -3 tablespoons of milk
Cinnamon or mixed spice.
Method:
Sieve the flour into the bowl. Rub in the margarine until it resembles fine breadcrumbs.
Add the sugar, dried fruit, beaten egg, and milk, until you have a dropping consistency.
I added a teaspoon of cinnamon to my mixture for extra flavour.
Grease a large baking tray and using spoons or forks, drop the mixture into little rocky shaped piles. The mixture needs space to spread as it cooks. The mixture will be sufficient for 12 small, or 8 adult size buns.
Dust the top of each bun with sugar.
Place into the middle of the oven. Bake for 12 minutes and then check. Bake for another 2 – 3 minutes if required.
Gently lift the cakes off the tray after they have cooled for a few minutes.
