Potato Salad German Style

There are many variations of potato salad in Germany, but most start with the basics of potato, onion, vegetable, or chicken stock, mayonnaise, and white wine vinegar.

Ingredients:

1 kg of potatoes

1 onion

Dijon mustard

2 tablespoons of white wine vinegar

Pepper

200 ml of vegetable or chicken stock

150 ml mayonnaise

Method:

Peel the potatoes, and cut into thick slices. Boil in salted water until only just cooked.

In a saucepan combine the water and stock cube. Finely chop the onion, and add to the pan. Cook for 3 minutes to soften the onion. Add the vinegar.

Add mustard and pepper to your taste.

Place the potatoes in a serving dish. Coat them with the the stock so that the potatoes absorb some flavour. They should not however be swimming in stock. Let this cool for 15 – 20 minutes.

Cover the dish with the mayonnaise.

Decorate with a few herbs such as chives, or parsley, finely sliced gherkins, or finely chopped bacon.
