Tuna Rillettes

Ingredients:

2 tins of tuna

1 tsp of olive oil

Pepper

Lemon juice

Cream cheese

1 shallot ( or onion )

Method:

Drain the tuna. If the tuna is in brine you may wish to add a few drops of olive oil. Combine all the ingredients in a bowl. The fun part of this recipe is that you can combine the ingredients to your liking. I like a few squeezes of lemon juice, and lots of pepper, but only a small amount of onion. Taste as you go along.

Put the mixture in ramekins or attractive bowls, and serve with toast, a baguette, or assorted crackers.
