Pierogi Leniwe – Polish Lazy Sweet Dumplings

Ingredients

  • 2 blocks (500g) of Polish Full Fat Curd Cheese
  • 1 sachet (50g) of vanilla Budyń (gluten free) or alternatively 50g of potato starch and a few drops of vanilla extract
  • 2 eggs
  • 2-3 tbsp of flour (gluten free)
  • 4-5 tsp of unsalted butter
  • 2-3 tsp of sugar (white or brown)
  • Cinnamon
  • Pinch of salt
This cheese is easily available online at Tesco and Morrisons
Open the packet and place in a medium size bowl
Crush it with a fork, add 2 yolks and smooth
Add full sachet of budyń (this one is gluten free), mix well with cheese and smooth again. If don’t have budyń, you can use 50g of potato starch and add a few drops of vanilla extract.
Beat the egg whites and add to cheese mixture
Once mixed, remove half of the mixture from the bowl and place it on a surface with a small amount of flour for coating
Start shaping the mixture
Once happy with the shape and thickness, start cutting blocks approx 2cm long
Boil approx 1.5l of water in a medium pan, add a pinch of salt and add approx 10-15 blocks, they will go to the bottom of your pan to start with
You need to keep watching the pan, once the blocks start floating cook for another 2 minutes, then gently remove with a spoon and place on a plate
Best served with melted butter, 2-3 teaspoons of sugar (white or brown) and good amount of cinnamon
