Ingredients:
5oz Margarine or Butter
5 1/2oz Caster Sugar
7 1/2oz Self Raising Flour
2 Eggs
1 Tbsp of milk or warm water
6oz Sultanas
6oz Raisins
4oz Cherries
1 Tin Apricots or Dried Apricots Part Cooked
Pinch of Salt
Method:
1. Cream butter and sugar
2. Beat eggs in gradually
3. Mix with butter and sugar, adding flour and salt
4. As needed, when mixture getting thick, add milk or warm water. Prefer warm water as cake will be lighter
5. Drain and chop aprictos, add mixture with dried fruit and cherries halved
6. Line an 8″ tin with greaseproof paper. Put in the mixture
7. Bake at gas no.3 for approx 1 1/4 hours or more, when tested with a needle (Note: cook for 1 1/2 to 2 hours)
8. When cold, wrap in foil and keep in fridge or can be frozen
