Broccoli and Bean Flan

Ingredients:
75g Butter
175g Wholemeal Flour
200ml Fresh Milk
100g Broccoli Florets
300g Red Kidney Beans, drained
100g Cheese, grated
3 Eggs
150ml Fresh Single Cream

Method:

  1. Rub butter into flour until the mixture resembles fine breadcrumbs. Mix to a dough with 45ml of the milk. Roll out on a floured work surface and use to line a 23cm flan tin. Bake blind at 200c for 10 minutes
  2. Cook the broccoli florets in boiling water for 2-3 minutes. Drain well. Arrange in the base of flan case with kidney beans and cheese
  3. Beat eggs, cream and remaining milk together and pour into flan case
  4. Bake for 35 minutes until set. Serve hot or cold
